Rasam

It s been like ages since i had home made food... We were waiting for our luggage to arrive since we moved to florida... so i was dieing to have some rasam for lunch today... and it came out very tasty.. It s very easy to make and yummy :)

Rasam is said to be made from the leftovers of Sambar ;)

The ingredients you need for this are

Left over toor dal water (Optional)
Tomatoes - 3 medium finely chopped
Onion - 1 small finely chopped
Garlic -  3 big cloves (smashed)
Green Chillies - 2 large finely chopped
Tamarind Paste - 1 tbsp (Mixed in Water;However I recommend you to use fresh tamarind as the canned one gives dark color) 
Coriander Powder - 2 tsp
Cumin Powder - 1 tsp
Red Chilli Powder - 2 tsp
Salt
Turmeric Powder

For Tadka :

Dry Red Chillies - 4
Mustard Seeds - 2 tsp
Urad Dal - 2 tsp
Fenucreek seeds - 1 tsp
PepperCons -  1 tbsp (You can add more for spiciness)
Cumin Seeds - 2 tsp  
Garlic Cloves - 3 big
Smash PepperCons, Cumin seeds and Garlic Cloves properly until they for almost like fine powder
Curry Leaves 
Hing 

Now how do you make it ?

1. Pour water in a vessel.
2. Add chopped tomatoes , onions and green chillies
3. Add chopped garlic, chilli powder, cumin powder,coriander powder,salt and turmeric powder
4. Add tamarind juice
5. Bring it to a boil 5
6. Simmer for about 30 mins so that the flavor comes out of all the ingredients

Let's make the tadka now

1. In another vessel heat some ghee (or oil) 
2. Add red chillies and mustard seeds
3. When the mustard seeds splutter add urad dal, hing,fenugreek seeds and curry leaves. (See that you don't burn them)
4. Add the peppercon, cumin and garlic powder.
5. Add this tadka to rasam and simmer again for about 10-15 mins
6. Add chopped cilantro

                          

Enjoy Rasam Rice with Chicken fry or Aloo fry (Any Vegetable fry) or a Papad 
It tastes real yummy :-)

Channa Masala

It was so boring at home today.. I had some chickpeas soaked in water for about 6 hrs...so i thought i ll make some channa masala and rotis for dinnner... So here are the ingredients required.. 

Soaked Chickpeas - boiled(dnt throw away the water)
While boiling just put in a tea bag.. it gives gud colour to the curry
Onions - one large fine chopped
Tomatos - One medium finely chopped

For guys who are lazy to chop the onions and tommatos (like me ;) you can grind them and get the puree :)

Green Chillies - 4 large ones chopped(u can even add more for spiciness)
Ginger Garlic paste - about 1 tbsp
Masala Powder - made out of cinnamon, cloves and green elaichis - like 1/2 tsp
Salt - to taste
Chilli Powder
Turmeric Powder
Tamarind juice for sourness or aamchur powder (optional)
You can also use store bought Channa Masala Powder - abt 1 tbsp
Oil 
Cilantro chopped

now coming to the procedure

1. Heat oil in a kadai and add the masala powder
2. Add chopped green chillies
3. Add the onion-tomatao puree if you have grinded(make sure to fry it well till the raw smell goes off)
                               or 
3. Add chopped onions and fry till golden brown (Tip : add lil bit salt... helps in frying onions a bit quick)
4. Add ginger garlic paste and fry for abt 2 min
5. Add chopped tomatoes and fry well so that u don t see any chunks of tomatos
6. Add red chilli powder, pinch of turmeric channa masala powder and tamarind juice
7. Add the water(look out for the consistency of the gravy) from boiled chickpeas and let boil
8. Add the chickpeas and simmer for few min
9. Add chopped Cilantro and some chopped onions and you are done :)

                          

This one goes well with Pooris( channa masala with a combi of poori is nothing but Chola Bhatura :)) and all kinds of rotis...Or just the curry tastes gud too :)
