Pudhina Rice - Another version :)

Here is another method of making the refreshing pudhina rice :)

You will need :

Mint leaves - 2 bunches 
Onion-  1 medium finely chopped
Green Chillies - 7-8 or to your taste
Coconut grated/shredded - 1/4 cup
Cumin - abt 1-2 tbsp
Whole garam masala 
Cashews roasted for garnish
Green peas - a little more than 1/4 cup (optional)
Rice - 2 cups cooked and cooled (add little oil while cooking so that the grains won't stick!!)
Salt
Oil

You need to do :

1. Grind the mint leaves, green chillies and coconut to a fine paste.. add very little or no water while grinding.
2. In a wide pan/skillet heat oil and add the cumin, whole garam masala and onions and fry well. Don't burn the onions.
3. Now add the ground paste, salt and fry for about 5 min or so till the raw smell is gone.
4. Add the cashews and rice and mix well and serve hot with Raita.

Mushroom Curry

Mushrooms... Three thousand years ago, mushrooms were a delicacy of the Pharaohs in Egypt, who considered them too delicate for common people to eat. They were favored in ancient Rome as a "Food of the Gods.So here's a very quick and tasty recipe. I'm not a good fan of mushrooms but started to like them :)

So here you go:

You will need :

Button mushrooms - chopped - 2-3 cups
Onions - 2 large chopped finely
Tomatoes - 2 med chopped finely
Ginger garlic paste - abt 1-2 tbsp
Curd - abt 1/4 cup
Coriander powder - abt 1-2 tsp
Amchur powder - abt 1 tsp or to your taste(optional)
Red chilli powder
Turmeric powder
Whole garam masala
Cumin
Salt
Oil
Cilantro

The Procedure :

1. Heat oil in a kadai and add the whole garam masala and cumin.
2. Add onions and fry till golden brown.
3. Add ginger garlic paste and fry for about 3 min.
4. Add the tomatoes and fry well they they are mashed up... add little water if necessary.
5. Add salt, coriander powder, red chilli powder, turmeric powder , amchur powder and mix well.
6. Add the mushrooms and add about 1/2 cup water mix well and with lid on, cook on a low flame with lid on till you get a good consistent gravy.
7. Add curd and mix well and cook for 2-3 min.
8. Add the chopped cilantro and serve hot.

And you are done :)

This goes well with white rice, brown rice, chapathis and naans too :)
