Sticky Date Pudding with Caramel Sauce :)

Well i was browsing stuff over the internet. This is a Sanjeev kapoor recipe and i added my version of the caramel sauce to it and contradicted it with vanilla ice cream and it turned out to be great!! And since i love dates i couldn't stop myself from making it. It was a simple one indeed !!

You will need :


For the Cake :

Dates - 1cup seedless and chopped
Baking soda - 1/2tsp
Water - 1cup boiling
Butter - 6-7 tbsp (softened)
Brown sugar - 1/2cup
Vanilla essence/extract - 1tsp
Eggs - 2
All Purpose flour/Maida - 1cup


For the Caramel Sauce :


Butter - 1/2 cup or 8 tbsp
Whipping cream - 1/4 cup
Brown Sugar - 1/2 cup
Vanilla essence/extract - 1/2 tsp

This is how i made the cake :

1. Preheat oven to 180C/350F
2. Take dates in a bowl and add the baking soda and a cup of boiling water and set aside for the dates to soften.
3. In another bowl blend together butter and brown sugar till soft and fluffy.
4. Add the vanilla extract and mix well.
5. Add the eggs and blend till it mixes real well.
6. Add in the flour and the dates along with the water and blend well.
7. Pour the batter into a baking pan and bake for 50-60 min / till the skewer comes out clean.
8. Cool and cut into pieces.

And the caramel Sauce :


Boil together the butter, sugar, cream and vanilla extract.
Simmer and cook for 3 minutes


To Serve :

Warm the cake and drizzle some sauce over it and serve it with a scoop of vanilla ice cream.


And voila!!!

Got this recipe from a TV show today and tried it immediately. Something new to me and though i'm not into sweets much, i liked this.. very simple and easy to make.

You will need :

Rava - 1/2 cup
Besan - 1/2 cup
Wheat flour - 1/2 cup
Sugar - 1 cup or to suit your taste
Cardamom powder for flavor
Water - 2 1/2-3 cups
Oil/Ghee

For Garnish
Cahews, almonds, raisins and any nuts fried in ghee/oil

This is how you do :

1. Heat oil/ghee in a kadai and add the rava besan and wheat flour and fry well till the raw smell is gone.(keep stirring so no lumps are formed)
2. Add sugar and mix well
3. Add the Cardamom powder and water and cook well till done.
4. Add the nuts and serve.
You can as well spread this on a plate and slice it :)

So here you go..

Orange Pound Cake

I wanted to master my baking skills.. So i tried baking this one. It wasn't that bad though.I loved the taste of this cake.It s pretty easy to make.


The Ingredients :
All purpose flour/Maida - 1 1/2 cups
Baking Powder - 1 tsp
Powdered Sugar - 1/2 cup
Butter/Oil - 5-6 tbsps
Eggs - 2 beaten
Orange Zest - 1-2tsps
Orange juice - 6-7 tbsps
Vanilla Extract - 1 tsp
Milk - 1/4 cup ( u can use buttemilk also)
Salt just a pinch

I made it like this :
1. Preheat the oven to 350F/180C
2. Grease and flour a round baking pan.
3. In a bowl cream butter/oil and sugar.
4. Add beaten eggs, orange zest orange juice and vanilla extract and beat well
5. In another bowl sift together maida, salt and baking powder.
6. Add this maida along with milk to the mixture and mix well(see that no lumps are formed)
7. Pour the batter into the baking pan and bake for like 30 -40 min or until the toothpick comes out clean :)
8. Let it cool for about 10 min.

For extra taste

On a low flame heat 1/2 cup orange juice and 1/2 cup sugar until the sugar dissolves.Spoon the syrup over the cake and let it cool completely
9. Slice it and enjoy..
