Egg Snack

Here s a very quick and simple starter. I wouldn't call it a recipe ..it's that simple!!

You will need :

Eggs - boiled
Carrot - very thinly sliced
Cilantro - Chopped finely
Salt & Pepper

How you do it :

Boil the eggs and cut them in halves.
Arrange the carrot and cilantro on top 
Sprinkle salt and pepper and
Here you go :)

You can also fry the boiled eggs slightly in a little oil and sprinkle the salt and pepper and serve!!


Laziz Tikka Masala

This was one recipe which i like to the core.. The "restaurant style" Laziz Tikka Masala.. It is a bit complicated to make..but all the hard work is worth it.. Trust me ...Your guys will just love it!! And so will you :)

You will need :

For the Tikkas and the marinade :

Chicken - 1.75 lbs boneless and skinless cut into tikka size peices (abt 1 1/2 - 2 inch peices)and preferably thigh meat

Marinade 1 :

Lemon juice - 1tbsp
Kashmiri Red Chilli Powder - 1tsp
Olive oil - 4-5 tbsp

Marinade 2 :

Yogurt - 1 cup
Ginger garlic paste - 2 - 3 tsp
Kashmiri Red Chilli Powder - 1 tsp
Garam Masala Powder - 1/2 - 1 tsp
Mustard oil - 2tbsp
Lemon Juice - 1 tbsp

Onion Tomato Masala :

Onions - 2 large chopped
Tomatoes - 4 medium chopped
Garlic cloves - 7-8 chopped finely
Cumin - 1 tsp
Ginger Garlic paste - 2 tsp
Cumin powder - 1/2 tsp
Coriander Powder - 1 1/2 - 2 tsp

For the gravy :

Onion Tomato Masala - 1- 1/2 cup
Tomato puree - 1 cup
Butter - 2 tbsp
Ginger Garlic Paste - 2tsp
Garam Masala Powder - abt 1/2 tsp
Kashmiri Red Chilli Powder - 1 tsp
Kasoori Methi - 1tsp
Cream - 1/4 cup
Water - 1/2 cup

This is how you do it :

Marination and Making the Tikkas :

1. First mix together the Chicken, lemon juice, salt, olive oil and red chilli powder and marinate for about 30-40 min
2. To this add the Marinade2 ingredients - curd, ginger garlic paste, garam masala powder, red chilli powder, mustard oil and lemon juice and marinate it again for 3-4 hours in a refrigerator.
3. Thread the chicken to the skewers and cook in a preheated oven at 350F/180C for 30 min or till they are done.U can also make the tikkas by placing the skewers on a pan and frying them till they are evenly cooked.
4. Remove from the skewers and keep aside.

Meanwhile for the Onion Tomato Masala :

1. Heat Oil in a kadai/pan and add cumin and chopped garlic and fry.
2. Add the onions and fry till golden brown.
3. Add the ginger garlic paste and fry for about 2 min.
3. Add the tomatoes, salt, cumin powder and coriander powder, mix well and cook on a low flame till the tomatoes are well cooked.
4. Set aside.

Now the final Stage :

1. In a pan heat the butter, add the ginger garlic paste & tomato puree and fry for like 2-3 min.
2. Add half a cup of water and cook for another 3-4 min.
3. Add 1-1/2 cup of Onion Tomato Masala and the Chicken tikkas ,mix well and simmer for about 5 min or till the gravy reduces a little.
4. Add the garam masala powder and cook for another 2-3 min.
5. Add the cream and Kasoori Methi and Cilantro- Mix well
6. Adjust the salt and red chilli powder to your taste :)

And you are done !!

This goes very well with rice and rotis/Naans

P.S - The Kashmiri Red Chilli Powder gives a good color and flavor to your chicken and the gravy.
You can as well have just the tikkas without any gravy ..They taste real good too :)
The chicken can be replaced with paneer/Tofu !!
So all you vegetarians... U don't have to miss out on this one :)

Sticky Date Pudding with Caramel Sauce :)

Well i was browsing stuff over the internet. This is a Sanjeev kapoor recipe and i added my version of the caramel sauce to it and contradicted it with vanilla ice cream and it turned out to be great!! And since i love dates i couldn't stop myself from making it. It was a simple one indeed !!

You will need :

For the Cake :

Dates - 1cup seedless and chopped
Baking soda - 1/2tsp
Water - 1cup boiling
Butter - 6-7 tbsp (softened)
Brown sugar - 1/2cup
Vanilla essence/extract - 1tsp
Eggs - 2
All Purpose flour/Maida - 1cup

For the Caramel Sauce :

Butter - 1/2 cup or 8 tbsp
Whipping cream - 1/4 cup
Brown Sugar - 1/2 cup
Vanilla essence/extract - 1/2 tsp

This is how i made the cake :

1. Preheat oven to 180C/350F
2. Take dates in a bowl and add the baking soda and a cup of boiling water and set aside for the dates to soften.
3. In another bowl blend together butter and brown sugar till soft and fluffy.
4. Add the vanilla extract and mix well.
5. Add the eggs and blend till it mixes real well.
6. Add in the flour and the dates along with the water and blend well.
7. Pour the batter into a baking pan and bake for 50-60 min / till the skewer comes out clean.
8. Cool and cut into pieces.

And the caramel Sauce :

Boil together the butter, sugar, cream and vanilla extract.
Simmer and cook for 3 minutes

To Serve :

Warm the cake and drizzle some sauce over it and serve it with a scoop of vanilla ice cream.

And voila!!!

Pudhina Rice - Another version :)

Here is another method of making the refreshing pudhina rice :)

You will need :

Mint leaves - 2 bunches 
Onion-  1 medium finely chopped
Green Chillies - 7-8 or to your taste
Coconut grated/shredded - 1/4 cup
Cumin - abt 1-2 tbsp
Whole garam masala 
Cashews roasted for garnish
Green peas - a little more than 1/4 cup (optional)
Rice - 2 cups cooked and cooled (add little oil while cooking so that the grains won't stick!!)

You need to do :

1. Grind the mint leaves, green chillies and coconut to a fine paste.. add very little or no water while grinding.
2. In a wide pan/skillet heat oil and add the cumin, whole garam masala and onions and fry well. Don't burn the onions.
3. Now add the ground paste, salt and fry for about 5 min or so till the raw smell is gone.
4. Add the cashews and rice and mix well and serve hot with Raita.

Here you go

Mushroom Curry

Mushrooms... Three thousand years ago, mushrooms were a delicacy of the Pharaohs in Egypt, who considered them too delicate for common people to eat. They were favored in ancient Rome as a "Food of the Gods.So here's a very quick and tasty recipe. I'm not a good fan of mushrooms but started to like them :)

So here you go:

You will need :

Button mushrooms - chopped - 2-3 cups
Onions - 2 large chopped finely
Tomatoes - 2 med chopped finely
Ginger garlic paste - abt 1-2 tbsp
Curd - abt 1/4 cup
Coriander powder - abt 1-2 tsp
Amchur powder - abt 1 tsp or to your taste(optional)
Red chilli powder
Turmeric powder
Whole garam masala

The Procedure :

1. Heat oil in a kadai and add the whole garam masala and cumin.
2. Add onions and fry till golden brown.
3. Add ginger garlic paste and fry for about 3 min.
4. Add the tomatoes and fry well they they are mashed up... add little water if necessary.
5. Add salt, coriander powder, red chilli powder, turmeric powder , amchur powder and mix well.
6. Add the mushrooms and add about 1/2 cup water mix well and with lid on, cook on a low flame with lid on till you get a good consistent gravy.
7. Add curd and mix well and cook for 2-3 min.
8. Add the chopped cilantro and serve hot.

And you are done :)

This goes well with white rice, brown rice, chapathis and naans too :)

Vegetable Hakka Noodles

So i was sick of the normal Maggi and stuff so tried this recipe. Has a lot of veggies in it and is very easy to make except for the chopping part and very tasty:). 

You will need :

Hakka noodles - 200 gms 
Carrot - 1 big very thinly sliced
Cabbage - about a cup very finely chopped
Colorful Capsicums - about a cup very thinly sliced
Onion - 1 med thinly sliced
Beans - about 10 chopped
Spring onions - about a cup chopped
Bean sprouts - about 2 handfulls or more if u like them :)
Soy Sauce
Chilli sauce (optional)
Oil ( i tried with olive oil.. it was good )

This is how you do  :

1. Boil water(about 10 cups) with some oil and salt and put in the noodles and cook for 2 min.
2. Drain the water and put the noodles in cool water and keep aside.
3. On a high flame heat oil in a wok(its easy to make in a wok or a pan)
4. Add the onions, cabbage, carrots, beans and toss them or sauté them or stir fry till the veggies become a bit soft but be careful be careful not to burn them.
5. Add the capsicum and again toss.
6 .Now drain water and add the noodles, soy sauce, chilli sauce, salt and    
pepper and toss well for about a minute or two.
7. Add the spring onions and sprouts.Mix well and serve.

You have to be a bit quick and careful so that you don't burn the veggies :)

So here you go 

Trust me, it was really yummy :)

P.S - You can also add scrambled egg to make Egg hakka noodles or can add boiled boneless chicken chunks to make Chicken Hakka Noodles :)


Onion-Tomato Chutney

I suddenly wanted to have this chutney very badly yesterday night for  my oats dosas.. I wanted something sour and spicy to go with the dosas.. So here it goes..very simple and tasty..

You will need :

Onion - 1 large chopped (for this one time you don't have to chop finely :))
Tomatoes - 1 large chopped
Green chillies - 6-7 or to your spice level
Garlic pods - 3-4
Tamarind - lemon sized 
Mustard Seeds - 1tsp
Jeera - 2tsp
Urad Dal - 1tbsp

How you do it :

1. In a kadai heat oil and fry the mustard, urad dal, jeera, garlic pods and chilles.
2. Ad the onions and fry till they become translucent.
3. Add the tomatoes and tamarind and fry till they become soft.
4. Cool and grind.( you can grind coarsely or into a smooth paste)

Here you go


It goes well with Dosas and Idlis :)
