Chole masala - Amritsari Style :)

This one type of channa masala i was wanting to prepare from a while now. Finally I got a chance to make it today. This a slight variation from the other channa masala I made before.

You will need :

Soaked Chickpeas - 1 Cup boiled with some salt (dnt throw away the water)
While boiling just put in a tea bag.. it gives gud colour to the curry.
Cumin - 1 Tbsp
Masala Powder - made out of cinnamon, cloves and green cardomom - 1 Tsp
Onions - one large fine chopped
Tomato - One medium finely chopped
Ginger Garlic paste - about 1 Tbsp
Black Salt - to taste - This gives a very good dark color to the chole masala.
Dry Amla powder - 2 Tsp
Aamchur powder - 2 Tsp
Chilli Powder
Turmeric Powder
Channa Masala Powder - abt 1-2 tbsp
Ghee
Cilantro chopped

How you do it :

1. Heat ghee in a kadai and add the cumin and masala powder.
2. Add chopped onions and fry till golden brown
3. Add ginger garlic paste and fry for abt 2 min
4. Add chopped tomatoes and fry well so that u don t see any chunks of tomatos
5. Add rock salt, amala powder, aamchur powder, red chilli powder, pinch of turmeric channa masala powder.
6. Add the water(look out for the consistency of the gravy) from boiled chickpeas and let boil.
7. Add the chickpeas and simmer for few min.
8. Add chopped Cilantro and some add some chopped onions before you serve.

This gave a different taste because of the black salt and the amla powder and it was really good :)

This tastes real good with pooris, bhatura and rotis.

Potato Fry

This is one of the most simplest recipe. Easy, quick and tasty.. I make this when ever i feel lazy and want to get over with cooking.. This goes really well as a side with sambar.

Here is what you need :

Potatoes - 3 Medium Peeled and cut into 1 inch peices
Onion - 1 Finely chopped
Tomato - 1 Finely chopped
Corriander Powder - about 2 Tbsp
Curry Leaves
Cumin - 1Tsp
Chilli powder
Turmeric Powder
Salt
Oil

This is how you do it :

1. In a kadai heat some oil and add cumin seeds.
2. Add the onnions and fry well.
3. Add the tomato, turmeric powder, salt, curry leaves and chilli powder.
4. Add potatoes, mix well and cook on a low flame with lid closed until the potatoes become soft. Keep stirring.
5. Add the corriander powder, mix well and cook again for 5 min.
6. You can garnish with cilantro and serve hot with white rice and sambar.

P.S. You can use baby potatoes instead of the regular ones :)
